Your guest can gather around the pool complete with it own sandy beach, tiki torches, palm trees, beach umbrellas and its own life guard station. Hot choices:

1. Quesadilla Cornucopia-red, yellow and green bell peppers, onion, jalapeno peppers, cheddar and jack cheeses, accented with a touch of cilantro and garlic, wrapped in a soft warm trumpet shaped flour tortilla.
2. Bacon wrapped scallops-fresh tender sea scallops wrapped in bacon and drizzled with homemade BBQ sauce.
3. Shoami- succulent little Chinese dumplings stuffed with chopped Chinese veggies and shrimp, served with a soy wasabi sauce.
4. Crab Balls-the original eastern shore recipe made with sweet blue crab claw meat and our secret spices, resting on a crisp saltine cracker with a dollop of cocktail sauce.
5. Chicken Wellington- our mini version, Delicate layers of puff pastry enrobe a tender chicken breast with a mushroom cream duxelle, lightly seasoned with shallots, garlic and a hint of sherry wine.
6. Beef Sate-tenderloin of beef glazed with a light teriyaki sauce, served on skewers.
7. Crab, Spinach and artichoke dip-fresh jumbo lump crab meat, chopped spinach, water chestnuts and artichokes blended with cream cheese, and a touch of mayonnaise and spices, served in a bread bowl with a basket of flatbreads and crackers.

Cold choices:

1. Jumbo Shrimp Display-steamed chilled shrimp, two ways. Some tossed with cracked peppercorns, extra virgin olive oil, freshly squeezed lemon juice and chopped parsley. Also, on this display we will have chilled shrimp and cocktail sauce.
2. Finger Sandwiches-thin sliced roast beef with a horseradish cream sauce, shaved turkey breast with a herbed mayonnaise and shrimp salad on a variety of breads. With this display we will have a blend of olives and corcichons.
3. Smoked Salmon Pate-fresh filet of salmon smoked in our kitchen over hickory and apple wood chips, blended with cream cheese and capers, spread on a fabulous fresh flour tortilla and sliced into easy to eat pinwheels.
